Visited dear friends in Somona last June and my friend Joe made ” Eggs in The Clouds” for breakfast one morning. Sounded good to me. I’m always looking for new breakfast recipes for the B&B, especially the ones that are tasty and not complicated and time-consuming. Just look at this photo, pretty yummy looking!
This is so easy to make and makes a beautiful presentation.
I suggest 2 clouds per person. Separate the yolks and eggs. Whip eggs whites till they peak. Divide the whites evenly on parchment paper. Use a spoon to intent the top of the clouds. Put the yolks in the center of the nest. Sprinkle with grated parmesan.
Cook in a 375 degree oven until yolks have set. Usually around 10 to 12 minutes.
I serve with a biscuit and slices of thick bacon.
