Blueberry Cream Cheese Pastries

Blueberry Cream Cheese PastryI enjoy using this recipe when blueberrries are in season and just busting with ripeness. Also, the price is good at that time!

It is and easy recipe that longs like you have labored over the puff pastry! A big hit with my guests.


1  8-ounce package cream cheese softened

1/3 cup sugar

1 tsp lemon juice

1 tsp vanilla

1 cup blueberries

1/2 cup blueberry preserves

1 package frozen puff pastry sheets (  2 sheets), thawed

1 egg

1 tbs water

1.  Oven to 400 degrees. Line 2 of your large baking pans with parchment paper.

2.  Blend cream cheese until smooth.  Add vanilla, lemon juice and sugar. Beat well. Stir together blueberries and preserves ; set aside.

3. Flour your working  surface, roll  your puff pastry into a 10 inch square. Cut  into six rectangles. Move them to the  baking pans. With a folk, prick the center of each rectangle, leaving a 1/2 inch border around the edges. Beat egg and water and brush the edge with the mixture. Leaving the 1/2 inch border , put a TBS of cream cream onto the center of each rectangle. Spread 2 tsp’s of the blueberry mixture over the cream cheese .

4. Bake for 15 to 20 minutes or until golden brown. transfer to wire racks to cool. Makes 12 pastries.


So easy…..and so good!
