Overnight Spice-Nut Coffee Cake

This is one of those yummy recipes that you can mix and refrigerate over night. Nice to sleep in a few extra minutes in the morning !  I recently had 2 Australians couples visiting and Michelle asked for the recipe. Whenever I am asked for one of our recipes, I always publish it.


This is a very simple throw it all together, the only thing you might not have in your frig is the buttermilk but you can remedy that by adding vinegar to milk.

1/2 cup butter, soften
3/4 cup granulated sugar
2 large eggs
1 cup brown sugar, divided
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon, divided
1/2 tsp. nutmeg
1 cup buttermilk
1 cup walnuts, chopped

Mix together half of the brown sugar, all of the regular sugar ,eggs and soften butter. Beat till smooth. Add nutmeg, half of the cinnamon, baking soda, salt, baking powder, flour and buttermilk. Blend well before adding walnuts.
Mix the rest of the cinnamon and brown sugar.  Cover the top with the mixture.

Refrigerate overnight.

The next morning it is best to let the batter reach room temperature before putting it is your 350 degree pre-heated oven.  It should be done in about 30 to 35 minutes. You can always test it by inserting a toothpick in the center until it comes out clean.
