Overnight Spice-Nut Coffee Cake

This is one of those yummy recipes that you can mix and refrigerate over night. Nice to sleep in a few extra minutes in the morning !  I recently had 2 Australians cou[ples visiting and Michelle asked for the recipe. Whenever I am asked for one of our recipes, I always publish it.










This is a very simple throw it all together, the only thing you might not have in your frig is the buttermilk but you can remedy that by adding vinegar to milk.

1/2 cup butter
3/4 cup granulated sugar
2 large eggs
1 cup brown sugar, divided
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon, divided
1/2 tsp. nutmeg
1 cup buttermilk
1 cup walnuts, chopped

Combine soften butter, sugar, 1/2 cup brown sugar and eggs. Beat till smooth. Add flour, baking powder and baking soda, salt , 1 tsp nutmeg, cinnamon, and buttermilk. Beat until blended. Stir in nuts.
Combine remaining brown sugar and cinnamon and sprinkle on top. Cover, refrigerate overnight.
Bring to room temperature before baking.

Use 350 degree preheated oven. Bake, uncovered, insert toothpick into center, if if comes out dry it is finished, 30 to 35 minutes.
